Good days often start with eggs on toast. Bad days can start with them too, but they seldom stay bad for very long. They are not too bad in the evening either, whatever the time, eggs on toast are always a good idea.
I drop mine in swirled boiling water with dash of cider vinegar and poach for about 3 minutes. Carefully removing them from the pan with a slotted spoon, I then serve on them hot buttered toast with a dusting of cracked black pepper.
A simple pleasure, but good for the soul.
