Baked Pumpkin Pie Chai Glazed Donuts

What better way to celebrate pumpkin season than with pumpkin donuts? Two of my favourite things rolled into one, combined with my favourite tea thrown into the mix! The chai element comes from the Bluebird Tea Co’s Spiced Pumpkin Pie Chai, which you most definitely need to try if you haven’t yet!

I love making donuts, and this baked recipe is a little bit better for you than the fried kind, giving you the excuse to make a few more! I’ve previously made mini ones using a mini silicone mould, but have recently upgraded to a large donut pan. This recipe makes 6 big ones, or 12 mini ones.

To make the donuts…
4 tsp Spiced Pumpkin Pie Tea
1/2 Cup Almond Milk
1 Egg
2/3 Cup Flour
1/2 Cup Sugar
1 tsp Pumpkin Pie Spice
1 tsp Baking Powder
1 tsp Olive Oil
2 tbsp Pumpkin Puree
1 tsp Vanilla Extract

For the glaze:
3 tbsp Icing Sugar
1 tsp Pumpkin Pie Spice
Water as needed

Method
Preheat oven to 180oC

Brew the tea in the almond milk on a low heat, and allow to steep for 4 minutes. Strain the tea leaves and allow to cool.

In a bowl, stir together the flour, sugar, spices, and baking powder.

Mix in the egg, oil and vanilla, then the pumpkin puree, followed by the milk and tea mixture.

Using two spoons, spoon into the donut pan, not covering the middle but making sure the mixture comes to the top of the pan.

Bake for 6-10 minutes or until the donuts are golden and springy to the touch.

Carefully slide the donuts out of the pan and leave to cool, then make the glaze.

Mix together the sugar and spice, and add the water a teaspoon at a time, mixing until it’s all combined. It should be loose enough to move around easily but not so runny that it can’t hold a shape. It should be nice and shiny too.

Once the donuts are cooled, dip them into the glaze so that one half is coated.
